Egg Paste


This dish is delicious and high in protein. It makes a generally good tidbit for parties once well represented and garnished. Egg paste goes well on toast, crackers and even a simple salad.

Ingredients:-
2-3 lrg hard boiled eggs (shelled)
1 ½ tbsp mayonnaise
1 tbsp grated cheese
2 cloves garlic finely diced (optional)
2 tsp freshly grind parsley
1 pimento pepper finely dice (red for a festive look)

Method:-

1.    Put eggs in a bowl and combine the cheese, mayonnaise, pimento, garlic and parsley
2.    With a fork flatten the eggs until it is incorporated in the mixture to form a paste
3.    Garnish with a sprinkle of parsley and basil (optional)

Serve with toast or crackers
