Amelia's Trinbago Coleslaw


This is an appetizing side dish to have with Pelau, macaroni pie, Sheppard pie, even a fresh salad. This dish is extremely simple, yet it adds the finishing touches to any meal.
Here is what you would need:-
1 large bowl
A grater
A carrot peeler
A fork
And a Pot Spoon
Ingredients:-
1 lrg cabbage
2 cloves garlic
1 tsp sugar
2 lrg carrots
1-2 tsp Winchester sauce
1 bottle of mayonnaise
1 sm onion (optional)
3 olives diced
Method:-
1.       Wash and peel outer layer then split cabbage into halves (this makes it easier to grate) and grate into a bowl.
2.       Wash and peel carrot over running water.  Grate into the same bowl which holds the cabbage. Put aside.
3.       Skin and dice finely the cloves of garlic and onion. Sprinkle over the cabbage and carrot mixture
4.        Add the Winchester sauce and tsp of sugar and mix thoroughly
5.       Now add the Mayonnaise 2 tbsp at a time. Mix evenly until you get the desired consistency
6.       Garnish with diced olives.
If you want to add bits of bacon as your garnish go right ahead. This dish is full of possibilities. I do hope you enjoy licking your fingers an all.
